Papi Brown Butter Blondies

Ingredients

  • ½ cup unsalted butter
  • 1 cup all-purpose flour (5 oz)
  • ¾ tsp baking powder
  • ¾ tsp salt
  • 1 cup packed light brown sugar (8 oz)
  • ¼ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ¾ cup chopped walnuts

Method

  1. Preheat over to 175°C
  2. Brown butter: melt the butter in a saucepan and cook until it becomes brown and smells nutty. Let it cool down 
  3. Whisk together the dry ingredients: flour, baking powder and salt
  4. In another bowl, mix together both sugars with the cooled melted butter
  5. Add in your eggs and mix in one at a time
  6. Add the vanilla and mix again 
  7. Add the flour mixture to the wet mixture and mix on low until they’re just combined
  8. Add in the white chocolate 
  9. Spread the mixture into a lined baking tray and bake for 30-35 mins or until a toothpick comes out clean 
  10. Melt the Pistachio Papi in a bowl in the microwave and sprinkle on top
  11. Add in icing sugar if you’re using 
  12. Add the Christmas decorations
