~ Preheat oven to 190°C
~ mix wet ingredients (except pistachio papi) until combined
~ sift in dry ingredients and lightly fold until half mixed in before adding in chocolate chunks and pistachios
~ Once combined, spoon batter into muffin cases
~ bake for 30 minutes until golden and a skewer comes out clean (keep an eye as every oven varies)
~ Add a spoonful of pistachio papi into the centre of each muffin (I used a piping bag)
